Moong / Lentil salad (Kosumbari)
Moong / Lentil salad (Kosumbari)
This is made in my home town on all special occasions. It is healthy and delicious.
Ingredients:
-1 cup split moong bean (green gram
-1/3 cup cucumber (peeled and diced)
-few strands of cilantro (chopped)
-salt to taste
-2 tsp oil
-fresh or frozen grated coconut
-green chillies for heat (optional)
-1 tsp mustard seed (optional)
-hing or asafoetida (optional)
Soak split moong bean for about an hour (if you are using whole moong, it will need to be soaked over night and sorted to get the hard beans out).
Add oil in a small pan. When oil is hot, add mustard seed. After the seed splutters, add chillies and hing.
Mix all the ingredients in a big bowl and add cilantro on top for garnish.
