Cashew Basil Pesto



I have been getting some beautiful fresh basil from the farmers market lately. We have been making basil pesto and using it in many dishes. My kids love pesto pasta, pizza and even pesto panini. Usually we make regular pesto using pine nuts. However, this time we were out of pine nuts and we tried it with cashews and it turned out great.


1.5 cup fresh basil leaves
1/2 cup olive oil
1 cup Parmesan cheese
1/2 cup cashew
salt to taste
Black pepper to taste

Place the basil, cheese, cashew , salt, pepper, and 1/3 of the oil in a blender or a food processor. Start pulsing as you add 1/3 of the olive oil. Keep pulsing until smooth.

Transfer to a bowl and add the rest of the oil. This can be made ahead and can be used in pasta, pizza or even on a sandwich. It can be used right away or can be stored in an air tight container in the freezer for a few months. Ours don't ever last that long, but it is good to make a huge batch and store for the winter months when fresh basil is not readily available.
