Vegan Space-shuttle Cake


I. Cake recipe

Ingedients:
3 cups Cake flour (we used Swans Down)
2 cups sugar (or sugar substitute)
1 tsp baking soda
1 cup Earth balance buttery spread
2 Tbsp oil (we used peanut oil)
1 can coke or mountain dew
2 tsp vanilla extract
1 tsp salt

Procedure:
1. In a bowl, sift together flour, sugar, baking soda and salt until it is light and powdery.
2. In another bowl, combine oil, vanilla and butter
3. Pour the liquid stuff into the dry bowl, add the coke and mix the batter
4. Pour the batter into a 13"x9" pan
5. Preheat oven to 375F. Bake for about 25 mins and check with a tooth pick. If not done, bake for 5 more mins.

II. Icing recipe

Ingredients:
1 cup Earth balance buttery spread
1 cup Tofutti cream cheese
4 cups confectioners' sugar
2 tsp vanilla extract

Procedure:

1. Combine the buttery spread (margarine) with the cream cheese n a bowl
2. While whipping the mixture by hand or with a handheld mixer, add the confectioners' sugar in batches
3. Mix until smooth and creamy and add vanilla
4 Cover properly with a plastic wrap and store in fridge until ready to use.

III. Carving space-shuttle

We used this idea to cut and decorate the cake like a space shuttle.
