Creamy Mango Coconut Soup
We just bought a Vitamix and we love it. We wanted to try something new and tried this new recipe. This is adapted from a South Indian dish which my mother-in-law taught me. It is very easy to make.
Ingredients:
-2 ripe mangoes peeled and diced (fresh/frozen)
-1/2 cup fresh/frozen coconut
-2 cups plain yogurt (place in room temperature for 6-8 hours allowing it to mildly sour)
-1 cup water
-4 dry red chillies
-1/4 tsp fenugreek seed
-Salt to taste
Roast fenugreek seed and red chillies untill golden brown.
Place all the ingredients in the blender and blend until it becomes smooth. Transfer to a vessel and simmer for 10-15 min in low heat. This can be served as soup in a bowl or can be eaten with rice or can be used as a dipping sauce for naan / bread.
Note: If you are making this in Vitamix, place all the ingredients in Vitamix. Turn machine on and slowly increase speed to Variable 10, then to High. Blend for 6 minutes or heavy steam escapes from the vented lid.
